Banana Pancakes

Happy Friday! 

I have posted the recipe for magic pancakes before (oats, muller, egg mixture left overnight) but I am trying to avoid muller lights because of the aspartame. These pancakes are 5 syns (for all of the above!) as the banana is mashed and cooked, but well worth it and deliciously simple. 

Ingredients

1 banana  

2 eggs 

That’s actually it. 

Mash the banana. Beat the eggs in a separate bowl then mix the two together. Add any extra ingredients you might fancy (stevia, cinnamon, cocoa powder, honey). Spoon a dessert spoon of the mixture onto a hot frying pan sprayed with Frylight and fry on both sides until golden brown. Serve up with fruit, Nutella, Greek yoghurt….whatever you fancy! 

Crazily simple. The trick to getting an impressive pancake stack is keeping them small, I have found (through trial and error!) that the dessert spoon gives the best sized pancake. Any other ways please let me know!
