I’m writing this on the commute home, it’s Tuesday and has a vibe of sad, rainy Thursday. I have my mac with me – and it’s August! New job combined with ruptured knee ligament exhaust me too quickly!
Let’s paint things in a more positive light. For one, I had chicken salad for lunch today, but before I cooked the chicken I smothered it in almond butter. Soooo gooooooood.
Best thing for the commute home is to fantasise about the exciting dinner concoctions to be rustled up. Being a big fan of quick and easy, I love this peri peri chicken burger. I’ve lost the syns for the Schwartz (or equivalent) peri peri sachet, but you could always use spices and tomato purée to create your own sauce. I’ll work on that!
Ingredients (serves 1)
1/4 Schwartz peri peri chicken sachet
1 chicken breast
1 wholemeal bun
Lettuce, peppers, tomato, red onion (etc) for fillings
Preheat the oven to 200°C (fan oven). Place the chicken in a bowl and smother with the sachet ingredients. Bake for 15 – 20 minutes.
Place the chicken in the bun and add the lettuce, peppers, red onion, sliced tomatoes and/or any other filings. Serve and enjoy – fakeaway heaven!
