Magic Pancakes


Sundays are the Ultimate Day. Having one of those Monday to Friday, 9 to 5 (ish) jobs means that when I wake up on Sunday morning, I can work this day to perfection, using the time however I want!  This morning started off with thirty minutes of “yoga”.  For anyone who knows me, this must be a fairly hideous / hilarious concept, as I am notoriously clumsy and inflexible.  Yoga is not the wisest choice!  I am powering through, having downloaded a new app so limited members of the public are subjected to my downward dog.

After yoga, I made the Slimming World classic “magic pancakes,” or oatcakes.  Simple, syn free and very tasty.  This was my second attempt at these, and they are possible the most filling breakfast I’ve ever had.

Serves 2.


60g plain porridge oats (35g pp as Healthy Extra B on Slimming World)
2 Muller lights (I used strawberry flavour)
2 eggs
Sweetener (I use Truvia)

The night before, mix the oats and Muller light into a bowl and leave in the fridge overnight (creating Overnight Oats).  In the morning, add two eggs to the mixture, add a little sweetener and whisk to make it as smooth as possible.

Spray a frying pan on medium heat with Frylight, then spoon the pancakes into the pan using a dessert spoon.  Heat for 4-5 minutes on each side, or until the mixture stops bubbling.

Serve up with fruit, natural yoghurt or fat free fromage frais.  Delicious!
