Nutella Peanut Butter Weetabix Muffins

Willpower. That’s all it takes really. Unfortunately that’s not something I have in abundance!

Last Saturday we went to our friends’ brilliantly organised party, which included a table full of delectable cheese and pastry based goodies. With all the best intentions, we had a minute steak, swede mash and spinach dinner before going to the party, in a bid to remove temptation. We were outbid by that pesky willpower.

The week continued in much the same vein, so disaster struck on Weigh In #2 of 2015 and I gained a pound. I wasn’t focused enough on Slimming World and seemed to be concentrating on maximising syns rather than free food. So J and I made the executive decision to have a Cheat Night.

We had Krispy Kremes and a mountain of Chinese food. And the verdict? Completely not worth it. I felt groggy and uncomfortable and the food didn’t taste any better than SW meals.

The next morning, our strategic Cheat Meal worked. I have a renewed focus on eating clean and saving most of my syns until I’m home, which is where I go kitchen-wandering and am most likely to oversyn.

Yesterday I made weetabix muffins for the first time, if you’re on SW these are one healthy B choice a day. I jazzed them up slightly with a layer of peanut butter and Nutella for approx. 4 syns.

Nutella Peanut Butter Weetabix Muffins

Serves 1.

2 Weetabix, crushed
2 eggs, beaten
1/2 Mullerlight or natural yoghurt
2 tbsp Sweetener
Vanilla extract
Optional: Chocolate Options sachet for 1 syn, stirred into the yoghurt

For the filling:
1 teaspoon Nutella
1 teaspoon peanut butter

Preheat the oven to 180°C

Mix the Weetabix, eggs, yoghurt, sweetener and vanilla extract together in a bowl. Pour into two silicon muffin cases and bake for 25 minutes. Leave to cool.

Once cool, cut a deep slit in the top of each muffin and using a knife scrape the peanut butter then the Nutella through the slit. Eat and enjoy!!
