For the Love of Meringue

Eton mess.  As the namesake for this blog and one of my all time favourite, low-syn (thanks Slimming World!) desserts, I wanted to give a nod to it fairly early on.

It’s not easy to resist saying here’s one I made earlier!  So incredibly easy, just crushed meringue, cherries, strawberries and a dash of either Anchor (low fat) squirty cream or natural yoghurt.

I also use my Hinari Genie to make a snappy strawberry coulis, blend strawberries with a little water and a teaspoon of sweetener, and serve over the meringue.

A little heaven in a bowl!
