First ever homemade Rösti!

Rösti with torn ham
Another simple dish, perfect for one…

Ingredients
2 eggs
1 potato
1 parsnip
1 tbsp plain flour
Ham slices

Peel and grate the potato and parsnip, pop into a bowl with the flour and a beaten egg.  Season, mix together then fashion into 2 Rösti shapes.  Heat a pan, spray with Frylight and cook for around eight minutes.  Meanwhile, heat a saucepan of water to simmering point and add an egg, simmering for approx. 3 minutes (for a dollop of yolk porn).

Tower the rocket, Rösti, ham (torn into pieces) and egg, garnish with black pepper.
