I often sit down with my colleagues at lunch as they stare into their bottomless tupperware of rabbit-food salad. It doesn’t have to be that way! This salad, which I’ve never made before, hit the power of 3 perfectly – easy, clean, (so) TASTY!
Serves 1, as I was in alone (studying), on a Saturday in Summer – with no weddings to attend!
Ingredients
1 pack smoked mackerel
1 pack ready-to-eat beetroot spheres
1 pack watercress
50ml fat free yoghurt
1 tbsp horseradish
1 tbsp lemon juice
Handful of parsley, chopped
Cut a couple of beetroot balls into slices. Peel the skin off the mackerel and rip into smaller pieces. Place the mackerel pieces on a plate between two pieces of kitchen roll and microwave for 2 minutes… the kitchen roll blots some of the oil from the fish. Don’t ask, I’ve just asked cooked it this way! While the fish is cooking, mix the yoghurt, horseradish and lemon juice in a bowl and stir.
Place the watercress on the plate, followed by the beetroot and mackerel. Add the dressing and garnish with the parsley (I’m wondering if there’s much I don’t garnish with parsley at the moment!) Can thoroughly recommend this tasty salad, miles better than rabbit food!
