Peri Peri Chicken
This is one of my easiest, tastiest favourites!  A classic Slimming World dish.  Of course there is an element of “cheating” involved, as with a lot of my dishes!  I use peri peri sachets over the chicken, which can be adjusted to accommodate different palates, e.g. I hold back on the peri peri for my mum as she prefers less spicy.

Serves 4, syn free on Slimming World extra easy.

4 chicken breasts, cut into chunks 
2 garlic cloves, crushed
Half packet of peri peri chicken seasoning sachet (I use Colman’s)
2 red onions, quartered
1 yellow pepper, roughly chopped
1 red pepper, roughly chopped
12 cherry tomatoes
Little gem lettuce 

Preheat your oven to 220°C (200°C for fan assisted ovens).

Mix the chicken, garlic and peri peri sachet in a large bowl and season.  Spray a non-stick roasting tin with Frylight then assemble the chicken mixture in the tin.  Arrange the chopped peppers, onion and tomatoes around the chicken.  At this point I like to gently press the tomatoes with a potato masher to crush them slightly.  Spray everything with Frylight and pop into the oven for 20-15 minutes. 

Arrange little gem lettuces on each plate, the spoon the chicken and veg into the lettuce to serve. Garnish with coriander.
