This is without a doubt the best SW dessert I have made, found on the website but I tweaked it slightly.
Outstandingly quick and easy too!
Serves 6, 6 syns a slice.
100g ginger nut biscuits
25g butter, melted
Tub of quark
Tub of fat free fromage frais
Put the ginger biscuits into a freezer bag, tie and crush them with rolling pin. Tip into a bowl and stir in the butter. Line a springform tin with the biscuit mix and squash down.
Blitz 225g of the strawberries in a blender / food processor, taking care to leave the mixture with a bit of texture. Chop some of the remaining strawberries into small chunks.
Pour the fromage frais, quark, strawberry purée and chopped strawberries into a bowl and stir, adding natural sweetener to taste. Pour over the biscuit base and decorate with the remaining strawberries, sliced. Leave in the fridge to set (this only takes around an hour).
